Chayote (mirliton) au gratin

3 chayotes (mirlitons )
1/2 cup plus 1 tablespoon grated Parmesan or Romano cheese
1/4 cup milk
4oz Sour cream
3 tablespoons mayonnaise
1 teaspoon mustard
1/2 teaspoon salt
Dash of black pepper
3 tablespoons butter
1 medium onion finely chopped

Wash and peel the chayotes. Cut them in very thin slices. Brown the slices it in butter or olive oil (add onions and garlic if you like them) for about 5 to 7 minutes. Drain and set aside.

Prepare the cream sauce in a blender: Mix the milk, sour cream, cheese, salt, pepper, mayonnaise and mustard. Once it is ready, mix it with the browned chayotes.

Lightly grease an oven proof container. Bake uncovered 30 to 35 minutes.
