Roasted Pork with Djon Djon mushrooms

Roasted Pork with Djon Djon mushrooms
from the CULINARIA

3 Tablespoons Olive Oil
1 pound pork tenderloins (or 4 pork chops)
2 tablespoons lemon seasoning mix
2 teaspoons pepper seasoning mix
(mix lemon & pepper seasoning together)
4 cups of Djon djon mushrooms
3 cups potatoes, peeled and quartered
1 sweet pepper, seeded and chopped
1/4 teaspoon hot red pepper, seeded and finely chopped
1 clove of garlic, finely chopped
1 onion, chopped

Preheat oven to 450 degrees F (230C). Rub 1 tab;espoon of olive oil into large roasting pan. Season the pork with 1/2 of the lemon & pepper mix and put it in the pan. Toss the vegetables with remaining olive oil and seasoning mix in a large bowl. Then cover the pork with them. Roast for 20 minutes uncovered. Stir occasionally until the pork is cooked and the vegetables are tender. If you are using tenderloin, cut the pork in thin slices and serve on a bed of rice.
